Roast beef, one of the best-known British dishes, is now a staple across all the world’s culinary cultures. To uncover its secrets, we visited Milan, at Luogo di Aimo e Nadia, the two-Michelin-starred restaurant run by a couple of chefs who are among the most influential figures on the contemporary Italian culinary scene.

Let Alessandro Negrini and Fabio Pisani guide you, with their expertise and warmth, on a journey to discover a roast that has become a true ‘cult’ dish. 

 

Ingredients 8 Serving:

For the beef
 - Beef forequarter - 1.5 kg

For the dry rub
- Cane sugar - 60 g
- Fine sea salt - 30 g 
- Extra virgin olive oil - 25 g 

For the pesto
- Caraway seeds - 2 g 
- Sarawak black peppercorns - 2 g
- Slice of garlic - 1 g 
- Parsley leaves - 10 g
